Spicy Curry Cashews

Prep Time: 3 to 9 hours

Drying Temp: 135° to 155°F

Drying Time: 8 to 12 hours

Yield: 6 to 8 servings of nuts, or 12 to 18 servings of trail mix

 

INGREDIENTS

1 quart warm water

11/2 tsp kosher or sea salt

8 ounces (11/2 to 2 cups) cashews

2 tsp sugar

1/2 tsp ground cumin

1/2 tsp ground coriander

1/2 tsp paprika

1/4 tsp curry powder

1/4 tsp cayenne pepper

2 tsp water, or as needed

 

PROCEDURE

  1. Combine the water and salt, and stir until the salt dissolves completely. Add the cashews. Make sure the water covers the cashews completely. Soak for 2 hours at room temperature or up to 8 hours refrigerated. Drain and rinse the cashews thoroughly.
  2. Stir together the sugar, cumin, coriander, paprika, curry powder, and cayenne. Add the nuts and toss, adding the water as needed to help the seasonings evenly coat the nuts.
  3. Spread the cashews on the drying trays in a single, even layer.
  4. Dry until crunchy with no sign of moisture, at 135° to 155°F for 8 to 12 hours.

 

STORAGE

Up to 3 months at room temperature, 6 months refrigerated, and 1 year frozen in an airtight container.
